Decided to make some gumbo the other night . . .

Fresh vegetables: okra, tomato, celery, onion, bell pepper . . . .

Then cooked, stirring non-stop (about 10 minutes) till it turns brown, without burning.

This came out rather gnarly looking

But, it sizzled like molten lava when I dumped it into the rest of the gumbo, and it thickened right up.

The browner you make it, the better (richer and nuttier) the taste.

I also added some pan-seared fish to it . . .

and some shrimp, as pic'd above.

Gumbo was inhaled in about a couple of days.
